While I’m on this recipe kick filling my freezer, I’ve had the pleasure of sharing some of my pre-made food with pregnant friends. And believe me, when one friend gets pregnant, they ALL seem to get pregnant! At the moment I have 6 friends who are pregnant and in varying stages, but one thing EVERYONE can use is pre-made freezer meals!
One fan-favorite has definitely been this bacon and potato soup recipe. Ah, potato soup. So creamy and full of flavor. You add bacon and you just can’t go wrong.
And what’s even better is it’s so simple, yet this is the soup everyone requests when they come to visit!
Best served with a crusty homemade bread…
- 8 slices bacon cooked and crumbled (I've also used leftover sausage or ground beef)
- 4 c potatoes cubed
- 1 onion chopped
- 1/8 tsp pepper
- 1/2 tsp salt
- 3 c milk the thicker the better
- 2 cans cream of chicken soup (I've also used one can of cheddar cheese soup for variation)
- 1 can corn drained
- 2 c sour cream
- Cook the bacon, cool, and crumble.
- Put in crock pot with all ingredients EXCEPT sour cream.
- Cook on LOW 6-8 hours, adding sour cream one hour before serving. It's that easy! Enjoy!
After it's cooked, you can freeze individual servings in a muffin pan and save together in a ziploc bag for an easy-to-grab pre-portioned meal.
You can also add variation with lots of different vegetables. Instead of corn, throw in some chopped zucchini or squash!
