Ingredients
- 4 chicken breasts
- salt and pepper to taste
- 1 tbsp olive oil
- 3 cloves garlic minced
- 4 tomatoes diced (or use canned tomatoes, drained)
- handful basil leaves
- 8 oz mozzarella sliced
- balsamic vinegar drizzled to taste

Instructions
- Heat olive oil in a large cast-iron pan over medium-high heat.
- Season both sides of the chicken and place in pan. Brown one side and flip.
- Sprinkle minced garlic, basil, and tomatoes around the chicken.
- Once chicken is cooked thoroughly, add slices of mozzarella over the chicken and cover just until cheese is melted.
- Drizzle with balsamic vinegar and serve!
