This one was a Leftover Makeover where I took what I had and made it into something completely new and, in my opinion, a little bit fancy! 😉 Enjoy!
Ingredients
- 3 chicken breasts pounded flat
- 1/2 c gorgonzola
- 1/2 c mascarpone
- 2 tbs garlic powder
- 3 slices deli ham
- 1 c zucchini noodles
- 1 onion
- 2 tbs butter

Instructions
- Pound the 3 chicken breasts until they are flat (this helps them to roll easier). I've found the best way to do this with minimal mess is to place the breasts in a gallon ziploc bag then pound the chicken with a can from the pantry.
- In a small bowl, mix the gorgonzola, mascarpone, and garlic powder.
- Lay out the ingredients and toothpicks so you can grab them all easily to make the dish. Spray your baking dish with olive oil. Preheat oven to 425.
- Lay out a chicken breast. Spread the cheese mixture across the middle. Roll the chicken breast around itself and wrap in a slice of ham. Wrap in zucchini noodles and pin together with toothpicks. Place in baking dish. Do with all chicken breasts.
- On the stovetop, sauté one chopped onion in butter until just brown. Place around the chicken in the pan with any extra zucchini noodles.
- Bake at 425 for 1 hour or until chicken is cooked through.
