I’m on a bit of a recipe kick right now trying to fill the freezer with pre-made meals so we’re less tempted to eat out. The biggest reason we go out is because I’m tired after a long day and don’t feel like making food.
Right now I’m full of energy because Bird has started entertaining herself—yay!—and Bean is being a wonderful big brother to her and showing her new things—huzzah!
This means I actually can take an hour to myself and prep something in the kitchen for later while they play! I try to get Bean’s help when I can, but it’s kind of nice to let them play while I quickly fix some things that could come in handy later when something comes up—because it inevitably will, since that’s life—and I don’t have dinner ready for that night.
So, here’s a classic favorite my husband and I grew up with. It’s usually cooked in the oven, but I’ve managed to cook it quicker (and easier, I think) on the stovetop and only using one pot. Enjoy!
- 2 c rice cooked
- 2 chicken breasts diced
- 1 package frozen broccoli
- 2 cans cream of chicken soup
- 1/2 c mayonnaise
- 1 tbs lemon juice
- 1/2 lb cheddar cheese shredded
- Dice chicken and shred cheese (separately) and set aside. Start your rice cooking (I have a microwave rice cooker I use that takes 30 min.).
- In a large saucepan (has to be able to fit everything in it), cook the chicken breasts in a little olive oil.
- Once the chicken is cooked through, add the broccoli.
- Stir in the soup, mayo, and lemon juice making sure it's all mixed together thoroughly.
- Cover and simmer for 15-20 minutes.
- Pour in the shredded cheese and stir until melted and mixed. Serve over rice.
This is, again, a highly versatile recipe in that you can also do cream of mushroom soup and mozzarella cheese or any other sorts of cheesy combos!
The best way to save leftovers of this (without rice) is to scoop it into a greased muffin pan and freeze for about 30 min. Remove from freezer, pop out the individual servings, and store in an airtight container ready to be grabbed for a quick meal with some fresh rice.
