  1. Dice chicken and shred cheese (separately) and set aside. Start your rice cooking (I have a microwave rice cooker I use that takes 30 min.).
  2. In a large saucepan (has to be able to fit everything in it), cook the chicken breasts in a little olive oil.
  3. Once the chicken is cooked through, add the broccoli.
  4. Stir in the soup, mayo, and lemon juice making sure it’s all mixed together thoroughly.
  5. Cover and simmer for 15-20 minutes.
  6. Pour in the shredded cheese and stir until melted and mixed. Serve over rice.

This is, again, a highly versatile recipe in that you can also do cream of mushroom soup and mozzarella cheese or any other sorts of cheesy combos!

The best way to save leftovers of this (without rice) is to scoop it into a greased muffin pan and freeze for about 30 min. Remove from freezer, pop out the individual servings, and store in an airtight container ready to be grabbed for a quick meal with some fresh rice.
