Bean’s favorite book right now is Dr. Seuss’s Green Eggs and Ham. He knows it backward and forward to the point that he can finish the rhymes with you.

I love this kid. He’s such a reader like his momma…
So, as something fun, we decided to make blue chocolate chip cookies! Why blue, you ask? And not green?
Well, blue is prettier, frankly, and more appetizing. And I’ve always wanted to make blue cookies ever since reading the Percy Jackson series by Rick Riordan. The main character is the son of Poseidon, and so his mom always makes all blue food on his birthday.
One of these days I’m gonna have a rainbow week where every day we eat all things from a different color of the rainbow. You know, Monday will be Red, so we’ll eat apples, tomatoes, cherry pie, spaghetti…you get the idea.
So here’s our blue cookies! I think they’re so pretty!
- 2 1/4 c all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 c butter-flavored shortening
- 1 c brown sugar
- 1/2 c white sugar
- 1 tsp vanilla
- 2 eggs
- 12 oz semisweet chocolate chips (or M&M's for more fun!)
- food coloring (your choice of colors)
- Preheat oven to 375.
- In a small bowl, combine flour, baking soda, and salt, then set aside.
- In a mixer bowl, cream together shortening, brown sugar, and white sugar.
- Add vanilla. Beat in eggs. Then slowly add in the flour mixture.
- Add a few drops of food coloring of your choice. Mix dough until the coloring is mixed throughout and is the tint you'd like.
- Stir in semisweet chocolate chips.
- Drop in rounded balls onto cookie sheet. Bake at 375 for 9-11 minutes. (Remove from sheet quickly if you'd like gooier cookies!)
