  1. Remove the shell from all 12 hard-boiled eggs. Cut each egg in half length-wise. (I usually have to wipe my knife clean with a paper towel between cuts to ensure a cleaner look.) Scoop out the yolk into a separate bowl.
  2. Once you’ve got all the yolks in the bowl, add the other ingredients. If you have an immersion blender, use it to get a creamier filling by pureeing the mixture BEFORE adding the slices of bacon. (Everything is really to taste so the best thing to do is add everything, mix it, taste it, and go from there on what more needs to be added.)
  3. Scoop the mixture back into the egg whites. Devour.
