A Seusstastic Birthday Party!

My sister-in-law just threw a Seusstastic birthday party for her wee one who just turned one! It was amazing what she accomplished with such simplicity and, yet, elegance!

Her highchair was decorated with a simple banner. I just love her hair clip and shirt! No doubts about who was the birthday girl on this day!

The house decorations were wonderful. I loved that she placed Seuss books wherever there was space. It was so simple, and yet added so much!

I didn’t get a picture of it, but the guest book was a copy of Happy Birthday to You! by Dr. Seuss. They had everyone sign the front and back leaf pages so whenever they read the book, the birthday girl can see special notes from those who love her!

The food was a compilation of great ideas. There were Cat Hats (bananas and strawberries on skewers), Truffala Trees (blue-iced cake pops with cotton candy), One Fish, Two Fish Crackers (multi-colored Goldfish crackers), Green Eggs and Ham (deviled eggs with ham—see below for recipe), and Lorax Juice (punch with 7Up).

My other sister-in-law made the incredible cake (and smash cake!). The fuzzy decor on top was brilliantly hair clips so it was a gift and cake in one! I loved the colors!

Instructions
  1. Remove the shell from all 12 hard-boiled eggs. Cut each egg in half length-wise. (I usually have to wipe my knife clean with a paper towel between cuts to ensure a cleaner look.) Scoop out the yolk into a separate bowl.
  2. Once you've got all the yolks in the bowl, add the other ingredients. If you have an immersion blender, use it to get a creamier filling by pureeing the mixture BEFORE adding the slices of bacon. (Everything is really to taste so the best thing to do is add everything, mix it, taste it, and go from there on what more needs to be added.)
  3. Scoop the mixture back into the egg whites. Devour.
