It had been a day. Poopy diapers, kids not sharing, kids bruising themselves on furniture, kids whining through lunch, kids not napping…all culminating in Mommy losing it. You know, One of Those Days.
When it’s been One of Those Days, I have a treat I love to make for myself that is 100% not good for me and 300% good for my spirit. I call it “Mommy Mix.”
What is the grand secret, you ask? Well, I’ll tell you.
1) Take one box of brownie mix.
2) Prepare according to package instructions MINUS THE EGGS.
3) Enjoy. 😉
I would strongly encourage you not to over-indulge, however, as even without the eggs, colly-wobbles may occur. It does however save very nicely in a sealed container in the fridge for up to a week. In fact, I think it only gets better each day as it becomes less like mix and more like chocolate brownie pudding…
